I baked Oreo muffins for my friends at church and they loved it!
I baked shallow muffins, and what I did was separate the Oreos and put the side with cream on the bottom of the muffin cup, poured the batter, and then topped it off with the other side of the oreo. It looked pretty and tasted AWESOME! Next time I'm willing to make oreo cupcakes, but I think I'm starting a diet so I'm not sure how soon that will be. I especially like this recipe because there is no butter involved. I used olive oil and I think that made the muffins moist.
Without further ado, heres the recipe I got from tumblr:
Ingredients:
2 cups flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk (or soy milk)
1/3 cup vegetable oil
1 egg
4 oreos (I made 8 shallow ones, so I needed 8 oreos)
Directions:
Preheat oven to 400F (thats about 200c° but I found that this was too high; probably better if its about 180c°)
Lightly grease or line a muffin pan
Mix ingredients in medium size bowl, in order, until just combined.
The dough might be a bit sticky so add some milk.
Fill muffin pan 2/3 full and bake for 20-25 minutes.
For a sweeter muffin sprinkle a combination of 2 parts brown sugar 3 parts white sugar on muffins before baking. Add cinnamon if desired.
